Maple Spiced Pecans
- 1 lb pecan halves
- 1/4 cup butter*
- Salt, to taste (opt)
- 1/2-cup pure maple syrup (dark is best - such as Grade B)
- Cinnamon, to taste
- Cardamom, to taste
- Nutmeg, to taste
- Black Pepper or Cayenne Pepper, to taste (optional)
Preheat oven to 300 degrees. In a large cast iron or ovenproof saute
pan, melt butter. Add pecans and toss to coat, cooking for about 5 minutes,
stirring frequently, over medium heat. Stir in maple syrup and spices.
Place pan in the oven and roast until fragrant and toasty -about 20 to
25 minutes, stirring once. Watch these carefully as they can burn easily
depending on your oven.
* I love these with butter, but if you don't like butter, just mix the
maple syrup with the spices. Toss the nuts in and bake as specified.
