Mediterranean Tomato Bean Stew with Spinach and Basil

2 Tbs. Extra Virgin Olive Oil
1 Small Yellow Onion, Sliced
3 Cloves Garlic, Finely Diced
1 14 Oz. Can Italian-Style Diced Tomatoes
1 15 Oz. Can White Beans, Drained
Salt And Pepper, To Taste
4 Cups Washed Baby Spinach Leaves
4 Oz. Crumbled Feta Cheese
1/4 Cup Fresh Snipped Basil Or 1 Tsp. Crushed Dried Basil
Cooked Couscous or Rice Pilaf

Sauté onion and garlic in oil for about 3 minutes. Add tomatoes, beans, salt and pepper. Cook, stirring often, for 10 minutes. Add spinach and basil. Stir and cook for 1 minute. Top with crumbled feta. Check to make sure it is seasoned to your liking and serve over hot couscous. This recipe will serve 2 to 4 people, depending on their appetite.
