Quick and Easy Sautéed Chicken with Tamarind Sauce

  • 2 chicken breast cutlets - tossed in ¼ cup flour mixed with salt and pepper to taste
  • 1 tbsp canola oil
  • Bottled Tamarind Sauce, to taste
  • 3 or 4 red vine-ripened tomatoes

Heat the oil in a skillet. Add the chicken and sauté for 3 to 4 minutes on both sides or until chicken is cooked through. Top with Tamarind sauce to taste. Cover and heat through. Serve over rice.
