Tomato and Fresh Mozzarella Salad

  • 3 or 4 red vine-ripened tomatoes
  • 1 large round of fresh mozzarella cheese
  • Extra virgin olive oil, to taste
  • Balsamic vinegar, to taste
  • Fresh oregano and/or basil, to taste
  • Freshly grated Reggiano Parmesana or Pecorino Romano (or both!), to taste

Slice the tomatoes and mozzarella. Arrange decoratively on a platter. Drizzle with good quality extra virgin olive oil and balsamic vinegar. Top with fresh herbs and cheese.

Yield: 6-8 servings
